Although the most popularized large mammal was the Woolly Mammoth, the largest extinct mammal is the indricothere, a giant prehistoric ancestor of the rhinoceros, which was far bigger than any of the elephants.

Sauropods (dinosaurs)
The sauropod called Bruhathkayosaurus is estimated at "only" 144 feet long (45 m), but it would have been the heaviest known land animal, heavier at 140 tons than most blue whales.
The physically "biggest" could be Amphicoelias, a Diplodocid about which little is known, but which may have been up to 200 feet (60 m) in length.

There are actually two extinct birds which fit your criteria. One of those birds is called the Elephant Bird which lived in Madagascar. Another is the Giant Moa.
The Elephant Bird was heavier but the Giant Moa was taller.
The elephant bird, Aepyornis maximus, is considered to be the largest bird that has gone extinct since 1500. It still survived in the 1650s, when it was observed regularly on the island of Madagascar, the only place it existed. It was over 3 meters (10 ft) tall and weighed close to 400 kg (880 lb). Its eggs were more than a meter (3 ft) around and 34 cm (13 in) long.
The terror bird, Kelenken guillermoi, found by a high school student in Argentina in 2003, was as tall as the elephant bird, but had a much larger head, nearly 3/4 meter (2.5 feet) long, with a bill about 1/2 meter (18 in) long.

The largest bird that is not extinct is the kiwi bird. Maybe it's the Royal Albatross.
Currently, the largest bird in the world is the Ostrich, but before the Ostrich there were even bigger birds like the Moa and the Elephant Bird. Unfortunately, these birds are extinct. The Moa became extinct in the 1800s, and the Elephant Bird (Aepyornis gracilis) became extinct in htye 1700s.
That bird is the elusive Ivory-billed Woodpecker.
The largest bird in New Zealand was the Haast Eagle. This bird of prey went extinct around 1400 due to lose of habitat and it's primary food source was also hunted to extinction.
The largest bird to have ever lived is the Madagascan Elephant Bird or Aepyornis. This flightless bird is thought to have have weighed up to 1100 pounds and have reached 11 feet in height. The tallest bird in the world was the New Zealand Giant Moa which could grow to 13 feet. The largest flying bird was the Argentavis of South America. Also called the Giant Teratorn, this bird could have a wingspan up to 26 feet. All these birds are now extinct.
The wandering albatross has the largest wingspan, at 3.4 meters. The kori bustard is the heaviest flying bird. It can weigh almost 20 kg.
