In the final motorcycle chase scene, Johnny Tran (Rick Yune) and Lance Nguyen (Reggie Lee) look to be riding on (modified) Kawasaki KLR 650's. The front fairings are obviously modified, the bikes' marks are removed/painted over, but the distinguishing feature for me was the rear luggage racks. The rack design is fairly unique to a pre-08 KLR 650.
However, in the scene where Dominic Toretto (Vin Diesel) swings his Charger around to hit Lance off the road and flying down the hillside, Lance is on a completely different bike. The bike that goes off the hillside is obviously a smaller dirt-bike. This can be told by the completely different rear fender and seat design, as well as the absence of a tail-light. I have no idea what the dirt-bike's make/model is.
I'm sure on was a heavily modified Harley VRod. I think both were. Check out vmod.com for VRod with custom body work.
