Some materials used in medieval times were things like wood for catapults wool for clothes and garments and glass mostly for stain glass windows in churches or castles of the noblemen.....the serfs usually only used straw for beeds and worked in the nobles feilds......they were under fuedualism at that time

There were many different kinds of weapons in the Middle Ages. Some were made to be weapons, but a very large number were made by adapting agricultural tools. Swords and axes were made of steel, but maces, war hammers, and war picks were made of iron or other materials, sometimes lead in the case of the war hammer. Long bows were made of wood, and crossbows of steel or wood. Pole axes, bills, war scythes, and the like were made of steel with wooden handles, and the lances used by knights were wood with steel tips. Arrows were also made of wood with steel tips.

Artillery was made of wood and leather, in the case of catapults, or iron, in the case of cannons (later bronze cannons came into use, and were much better, but I don't know that any appeared in the Middle Ages).
