Fish are mushy a) because they're harboring protozoa (thought not to be harmful to those who consume the fish--but who would eat mushy fish?); 2) they've been poorly handled--for instance, frozen & refrozen; 3as in the case of Alaskan halibut in the spring of 2012, the fishw as malnourished. You can't necessarily see, feel, or smell the mushiness in the market; but you should return it, if you can, & make sure the shop ceases to sell other slabs of that fish.
