More modern fencing came about around the high middle ages and renaissance when steel allowed swords to become lighter and thinner and the rapier was more heavily introduced. Epee and Foil came out of the dueling culture that followed. Fencing was not codified internationally until the 1900's. The Sabre is the most recent weapon and is a derivation of the cavalry sword (hence the upper body target area).

The earliest fencing handbooks were published at the beginning the Renaissance, and the earliest precise date on one of these handbooks is 1409 (Flos Duellatorum). One could say that the sport that we know today as fencing started around then. However, the sport fencing has changed greatly and has become more competitive.

Fencing has been around since 1400 A.D. In fact, all three weapons are based after different types of duels. Epee is based after a duel to first blood, Foil to the death, and Sabre is based after the calvary, in the way that you can only hit from the waist up.
