The Middle Ages started in the 5th century, or a little before or after. Some people date them specifically as starting in 476, and other people used other equally specific dates.
Artwork was made during the entire time of the Middle Ages. This was true not only for the Byzantine Empire, in which a rich history of artwork is easily available, but elsewhere as well. Artwork from the Age of Migrations, which was the beginning of the Middle Ages, is often very impressive.

It depends on what you consider the Middle Ages. If you take it from the "fall of the Roman Empire", that puts you around around 600BCE, and up to the Renaissance (give or take 1500BCE) it's a lot of ground to cover. Most of the stuff from 600-1138 were done by groups of people (people doing mosaics in cathedrals, and church commsioned things).
Scribes started getting famous in the 1140's onward. Master Hugo was famous for his Illuminations, which are drawings in bibles. Edwine the Scribe was another one.
The Bayeux Tapestry is really famous. It was embroidered, reading like a comic book, by a bunch of ladies in 1080, and it's 229 ft long.
They also used to paint icons, as well, and most were Byzantine. These were done on church commission, or a donor on behalf of the church. Some of the more famous Icon painters were Cimabue, Di Bondone, and Lippo Memmi. More than art came out of this period though. There were a bunch of genius architects that became well known. Arnolfo Di Cambio built the Florance Cathedral and Filippo Brunelleschi built the first true dome.
