I believe it was somewhat of an accident. Kernals of corn got into the heat of a fire and the water that boiled inside of them made them explode. Other things were tried to see what would happen to them also.
Popcorn is its own variety of corn (and within the "popcorn" realm, there are MANY varieties). It is grown much the same way as normal corn, however, it does mature faster--though the kernels remain much smaller than other corns.
Moisture is a key ingredient that makes a popcorn kernel explode when heated. Therefore, moisture is a closely monitored characteristic when harvesting and preparing popcorn for human consumption. Popcorn pops best at 13.5% moisture, but any range between 13% and 14% is OK (even a little bit more for microwave popping).
At harvest, popcorn is generally picked at 15% to 16% moisture, cleaned and also size separated to ensure consistency (and eliminate "old-maids"). The popcorn is allowed to dry to the ideal moisture and then packaged for sale.
According to legend, Popanipacetl. He was a lowly slave who was due to be sacrificed to the sun god by the ancient Aztecs. Unfairly, he was also forced to carry the corn for the sacrifice, as well as being a sacrifice himself. In his panic, he dropped a head of corn (or maize) into the fire. Some of the corn popped straight back out again, and his tribe thought this was magic and that he would be spared by the gods if thrown into the fire.
He wasn't, unfortunately, so his glory was short-lived. Popcorn is still called popanipacetl by some people in Central America.

The Aztecs have invented chocolate out of cocoa beans, discovered how to make chewing gum out of tree sap, and they introduced popcorn to the world, though they did not discover it. They were the first to have mandatory education and invented the Aztec calendar.
