Not all birds fly south for the winter. The ones who do, however, are driven by a need for available food. As their food supply dwindles they will fly to where food is more plentiful. Therfore, migration will usually happen in the autumn months.
The vast majority of migrating birds fly south in the early or late fall, depending on the climate of the particular location. In the northern U.S., for example, the weather gets cold quickly, and birds will generally migrate in the earlier portion of fall.
