This occurs at Mach 1, which is the speed of sound. If you're standing on the ground as the low flying jet goes past, you will hear the "boom" as the shock wave passes you. By the way, thunder is also a variety of sonic boom produced naturally by air collapsing at nearly the speed of sound around a lightning bolt.
