actually the best time to prune apple trees is spring. most farmers do the pruning in winter simply because they don't have time to do it during spring and summer but winter pruning will mean your trees are more likely to contract fungal diseases and die. after picking the fruit and before the tree goes to sleep do some automn pruning to fix unwanted growth resulting from the spring pruning.
additionally you need to think about what kind of growth you want and that will determine what kind of pruning is needed. if you cut each branch to a third the part left will thicken and sprout new shoots from the end creating a broom like growth. if you want fruit you need to let sun in the thick of the tree by removing obstruction, remove branches that grow strait up completely and leave the ones growing sideways. it you want the tree to get taller remove the lower branches and leave how ever many leaders growing up you want (most people go for 1-4, i prefer just the one). if you're removing branches thicher then half an inch diameter get some protective paint at a local gardening shop (tell them what you're going to do they'll know what i mean) and don't do the pruning on a damp day (increases fungal disease). good luck
Pruning should be done before the apple tree starts to bud out in the Spring. To encourage new growth, this is the best time. You can work on pruning after the apple blossoms have fallen off, this will cull out the apples and allow the remaining ones to get well feed by the tree. For shaping, anytime the plant is dormant, has lost its leaves, will work.

White pines don't need to be trimmed. You can trim off lower branches as the trees grow but leave enough branches to support the trees health.
