The free version of Google Earth has an outdated map of the world from about 2005. The paid version of Google Earth is updated regularly.
Satellite maps are as current as when they taken and depends on the satellite provider and/or source for the imagery. The base imagery, for example, in Google Earth and Google Maps is on average 3-5 years old. Weather imagery and overlays in Google Earth on the other hand are updated an hourly basis. Satellite imagery is Google Earth/Maps is incrementally updated usually about every 2-3 weeks in whatever area an update is available -- the entire globe isn't updated all at once. Likewise, Bing Maps updates its imagery once a month with typically more than 10TB of imagery, but its aerial and Bird's-Eye images for a particular location can sometimes be several years out-of-date.
Google Maps uses the same satellite data as Google Earth, most of which is approximately one to three years old. The roads and place names, etc. are updated on a continuous basis. Google does not provide detailed information about when a specific area will be updated in advance but you can receive e-mail notification when your area of interest was updated.

Google maps offers high-resolution aerial images from satellites. These images are not updated very often. Since they are not updated frequently, newer features of the Earth's surface are not shown as often as they appear. Certain parts of the Earth are not able to be viewed. They are not able to be viewed due to risks of terrorism and for government protection.

New Google Earth satellite imagery is added approximately every 2 weeks or a twice a month. Street View imagery is updated on its own schedule. The same imagery that is added for Google Earth is available to Google Maps as well.
On January 23, 2006, Google Maps was updated to use the same satellite image database as Google Earth. On March 12, 2006, Google Mars was launched, which features a draggable map and satellite imagery of the planet Mars. Source Wikipedia.
In 2006 Google Maps was updated to use the same satellite image database as Google Earth. Before that Google had to update and process imagery for both Google Earth and Google Maps where the maps where often out of sync with each other. Now Google updates its central map & imagery database and the updates are made available to both Google Earth and Google Maps at once. The time between getting imagery from satellite and seeing it on Google Maps is far from real-time. Once the imagery is taken by satellite, it takes time to process the data by a commercial provider like GeoEye before it is available to Google and other customers. Google will do additional processing to convert imagery into the format and coordinate system of its internal databases. This is one reason you normally won't find any imagery younger than about 6 months. For these reasons, the Google map & imagery database is updated once or twice a month.
The satellite imagery in Google Maps and Google Earth is typically one to three years old. The imagery is constantly being updated but the imagery is just a snapshot in time. Any outdated imagery means that any new buildings, upgrades, or additions will not be seen until the imagery is updated.Historical imagery in Google Earth and historical street view in Google Maps allow you go back in time to see what it looked like in the past.
There are some strange things you can find on the high resolution satellite and StreetView imagery available in Google Maps and Google Earth.
