Without question. The best northern suburban sushi restaurant is TSUKASA of TOKYO in Vernon Hills. It has incredible quality, the best specialty rolls, authentic Japanese owners, first class restaurant and reasonable prices... I have eaten there for many years and I have moved to Minnesota... I can tell you that I come back to Chicago on a regular basis and NEVER miss going to TSUKASA... It is great for date night because it has regular tables, great for family and friends night, because it has small to LARGE tipanyaki (sp) shows for the cooked Japanese food... it has a full bar, with great wine and top shelf cocktails.... all this and reasonable... You will go back often!!!
There's somewhere called 168 Sushi and it is kind of like a buffet, but not like the Mandarin's buffet. You order from a sheet and the waiter/waitress will pick it up from your table. There is a bottomless tea that they have.
You can eat their vegan sushi, most places do have this type of sushi available. They will generally have some other options as well. Rice is always a good option, some may even have some tofu.

If one can find a Japanese restaurant, one can also find Kyu Sushi. There are even some restaurants with Kru Sushi as their name. One such restaurant is located in the Ukrainian village in Chicago.

To prepare a good sushi kit one would need a good sushi mat to start. One then needs sushi rice, sushi vinegar, sushi seaweed and thinly slices vegetables and fish.

Sushi is normally wrapped in nori, a green seaweed. There are items sold in some sushi places that are wrapped in a translucent material. This is rice paper and is edible, though it is not traditionally used in sushi.
