First of all, it's Himalaya, not Himalayan. This is a very common mistake. The correct context for "Himalayan" would be in the following sentence, "What is the tallest Himalayan mountain?"

To answer the question: the Himalaya Mountains are fold mountains, which happens when two plates of the earth's crust collide with each other (in this case the Indian plate collided with the Asian plate) and literally fold the earth's crust. And that is why Mount Everest is still growing a few millimeters every year.
