Endives originate from Belgium. They are also known as Belgian Chicory.

In a skillet, cook the endives in 3 tablespoons of the butter over low heat, turning them to coat them with the butter, for 10 minutes. Add 2 tablespoons of the framboise, the white pepper, and salt to taste. Simmer the mixture for 1 minute. Transfer the endives with a slotted spoon to a serving dish and keep them warm in a preheated 250F oven. Swirl in the remaining 2 tablespoons butter, pour the sauce over the endives, and sprinkle the endives with lemon juice if desired.

traditional Belgian dishes such as carbonnade, endives and Brussels sprouts and Christmasy dishes such as speculoos and potato croquettes. I decided against making moules frites, a Belgian specialty, because only a couple of my guests like mussels and definitely skipped the roast turkey, the centerpiece of any traditional Belgian Christmas table, because I'm not particularly fond of turkey. I would have liked to serve Belgian cheese and Ardennes ham, but I wasn't able to find any at any of the stores I went to.
