well if you join the arena and battle your way to the top and become the grand champion then every week you can battle monster which can include a minotaur or two
There are also special minotaurs near the inn where you kill rufio in the first dark brothehood mission...
its called the grove of something (i forgot the name)
The Unicorn is also their so if u plan on killing the Unicorn make sure you have a magic weapon on hand...
