In the days of Schubert (1797-1828), most of their formal music training originated within the family themselves. In Schubert's case, he was born into a very active musical family and received all of his music instruction from his parents and other family members.
He did not attend traditional institutions to learn music. Hayden's musical talent was recognized at a early age by his parents but the realized they could not provide him a proper musical education in their little town inRohrau, Austria. As a result they accepted a proposal from a relative to have him apprentice with him in Hainburg, Austria, as he was a choirmaster. This started at age 6 and he never lived with his parents after this time. After 2 years at the age of 8 he came to the attention of Georg von Reutter, the director of music in St. Stephen's Cathedral in Vienna. He passed an audition and became a choirboy/chorister. Reutter did little to further his choristers' musical education, above practical application. However, St. Stephen's was at the time one of the leading musical centers in Europe, with many performances of new music by leading composers. Haydn was able to learn a great deal by observation, simply by serving as a professional musician there.
After 9 years, his voice had changed that he could no longer be a choirboy, so was forced to leave. When he was a chorister, Haydn had not received serious training in Music Theory and composition, which he perceived as a serious gap. To fill it, he worked his way through the counterpoint exercises in the text Gradus ad Parnassum by Johann Joseph Fux, and carefully studied the work of Carl Philipp Emanuel Bach, whom he later acknowledged as an important influence.
He served as a music teacher, as a street serenader, and eventually as valet--accompanist for the Italian composer Nicola Porpora, from whom he later said he learned "the true fundamentals of composition." From there his skills continued to increase and he gradually gained a public reputation.
There were no "colleges" per se during Beethoven's life. Most children took on the trade that their parents or other family members had and were taught by same.
