It depends on culture and timeframe. Knights were usually landowners, often local justices. They'd control an area, and the locals would support them in exchange for protection and a legal system. So they lived all over, but usually near a major road so they could arrange travel. They often built a central keep, which might be stone, brick or wood depending again on location and timeframe.
