How does one make the lye solution for lutefisk. What is the lye and dilution amounts? Also where does a person buy the lye? thank you.
Not in this universe, thank goodness! ;)
I tried lutefisk 18 years ago. My experience was that it taste like solidified mineral water that popped in your mouth. I didn't find it repulsive, but I won't be rushing to try it again.
Norwegian in origin, Lutefisk was first mentioned in the Norwegian literature of Olaus Magnus in 1555. It describes how lutefisk was prepared and eaten. Stockfish must soak in a strong lye solution for two days and two nights (48 hrs), it is then rinsed in fresh water for 24 hours before it is cooked and eaten. It is served with salted butter.
Ideally, never. However, lutefisk is a traditional dish of Norwegian Americans and has maintained its popularity despite the fact that it can strip silverware and is toxic enough that it had to be excluded from laws on the disposal of toxic waste. In the US, lutefisk is normally eaten at Christmas. In families where this is not a part of the tradition, it is sometimes made once or twice as the children are growing up to serve as a rite of passage.
