Metals are very good conductors of heat/electricity. Wood and plastics are not.
Because plastic and wood has no conductivity so the heat wont pass through it and wont burn the hand of a persons.
Cooking utensils have wood or plastic handles primarily to prevent the cook from burning his/her hands. Wood and plastic conduct heat much less than metal.

Cooking pots are made of metal which is a conductor so that they can can conduct heat and cook food.While the handle is made of plastic or wood which is an insulator of heat so that when hold the handle the heat doesnt pass to us and so we dont get burnt
the metal conducts heat to allow food to cook whereas the plastic doesn't allowing you to lift the pan
Cooking pots are often made of metal because 1) metal conducts heat well: that evens out the cooking of the food, so food doesn't get burned or scorched so easily

2) Metal is durable: cooking utensils get banged around and dented a lot, so metal pots last longer

3) Most metals have a high melting point: you can cook faster at a higher temperature.

Cooking pots have wood or plastic or Pyrex handles, because Pyrex and wood and plastic do NOT conduct heat very well. They are heat insulators. The wood/plastic/Pyrex handles help keep you from burning your hands on a hot cooking pot.
