Nothing happened to him. He doesn't exist in The Lion King movie series but only in The Lion King: Six New Adventures. It is official by the first film's makers that the cub at the end of the first film is not Kopa. It wasn't given a gender or a real name in its own film as they say this on the commentary track on the DVD. And this results in its only official gender and name being the girl Kiara from the only official movie sequel. Thus, nothing happens to Kopa as he never existed in the movie universe.

Kopa was not in The Lion King 2 at all as he is not an official The Lion King character. He is Simba and Nala's son, a character in a profit fanfiction book series called "The Lion King: Six New Adventures". Disney ignored this fanfiction by never refering to Kopa in that movie sequel and by confirming on the commentary track of the 2003 DVD release of the first film, that the cub in the end doesn't have a gender or real name. So the cub shown in the end of "The Lion King" is most officially the girl Kiara from "The Lion King 2". Kopa never existed in any of the movies.

He is a real character that appeared in a sequel book titled The Lion King: Six New Adventures. However, the filmmakers stated Simba and Nala's cub at the end of the first movie was named "Fluffy", and never gave the cub a specific gender. The Lion King II envisions the cub as a daughter named Kiara, and no mention of a son is ever said during the movie. So, while he is a real character in a book, he is not an official character in the movies.

No. He exists only in one book series in the book universe only and in those books he doesn't die. And it is official by the film makers' commentary track in 2003 that Kopa never existed in the movie universe, so he couldn't have died wherein he never existed in the first place.

Kopa's not in any movies but only in the book series titled The Lion King: Six New Adventures. The cub at the end of the first film is officially Fluffy/Kiara, and no one else. As Kopa was created by an outsider childrens' book writer, Alex Simmons, while Disney's film makers chose to call the cub "Fluffy" on the commentary track, and later turn Fluffy into Kiara (as evident by the official movie trailer and an interview with one of the animators.) Kopa is an official "fan"fiction character which Disney approved only for the book universe of the franchise.
