Basically, a lab person takes the DNA of one organism, cuts it with restriction enzymes at specific sites, which will make the DNA ladder have hanging single strands at the end. The same enzyme cuts the DNA of the organism you want to stick in the original dna. then, these strands go together.

Genetic modification is generally undertaken to create organisms with a beneficial trait, such as crops which are resistant to herbicides like glysophate, or that produce substances in the plant itself that kill insects, which is reported to reduce the use of synthetic pesticides.

They have also been used to create synthetic insulin to give to diabetics. In the past, insulin from pigs was used to manage Diabetes - but now insulin that is reported to be identical to human insulin can be created by bacteria (see link below). GMOs are also used to create drugs.

To answer your question directly, they are produced because some people genuinely believe they will benefit humanity, and because companies make billions of dollars producing patentable modifications.
