People cannot sing well when listening through headphones because 1) they are potentionally really bad singers to start with and/or 2) because they cannot actually hear themselves singing they are unable to adequately harmonise with the music which is in their ears. I mean, this is my very basic and slightly musically educated assumption. I'm sure someone will be able to give a much better explanation but I hope this helps somewhat.
