Mostly because those two gene loci are sufficiently far apart on their chromosome that crossing over will occur often enough so as to make these two appear to assort independently.
Besides flower color, Mendal studied seed shape, pod color, and plant height.
Developed the theory of genetic inheritance by studying the flower color of pea plants

Pea plants can only be either white or purple. In other words, there was no 'in between' color. This made it easier for Mendel to conclude that some genes are dominant (purple flower) and others are recessive (white flower).
Mendel did his experiments by using pea plants with various traits like the color of the flower, the shape of the seeds, the height of the plants etc and studied how those traits behave when crossed. For example, what happens when a short plant with red color flowers was crossed with a tall plant with purple colored flower etc.
Gregor Mendel's favorite color was green read it in a biography about him.
A scientist who experimented with garden peas and other plants in his spare time, Mendel discovered the fundamental principles of genetics. Between 1856 and 1863 he grew at least 28,000 pea plants and analyzed characteristics such as height, flower color, and pod shape.
Mendel studied seven traits: Height of the plants (stunted or normal); Flower color (purple or white); Pea color (Green or yellow); Pod color (Green or yellow); Position of flowers on stem (axial or terminal); and Pod shape (inflated or constricted).

I believe that you mean Gregor Mendel. He used peas to show dominant vs. recessive inheritance by noting their flower color. His observations were unappreciated for many years, but we now know that he was the first to systematically show the relationship between inheritance of traits, and how some traits are dominant over other traits.
Remove the hard returns from this answer, please. (and this comment)The seven traits that Mendel found in the famous pea experiment are: Seed color (yellow or green)Seed shape (smooth or wrinkled)Pod color (yellow or green)Pod shape (inflated or pinched)Flower color (purple or white)Flower position (axial or terminal)Stem height (tall or short)
He tested seed color and shape at the same time.
