Ireland is the country, not Irish. People that live in Ireland are Irish.

They migrated here because of the historic potato famine that left many Irish farmers dead or impoverished. There were many contributing factors as to how the famine started, but a major one was Phytophthora infestans, an oomycete that wiped out many farmers' crops.

a guess would be because of plague workers were needed in the uk and ireland might have been isolated from the plague so a call went out to recute workers for good pay recruting from ireland.
