To maintain the body temperature they stand on only one leg so that they can reduce loss of body heat as much as possible. A crane's body is covered almost all over with feathers to keep it warm. But the crane loses heat through its legs because there are no feathers on them. To save as much heat as it can, the crane stands on only one leg and tucks the other one up against its body. Most birds rest their breast on the ground or a tree branch and tuck their wing when they sleep. Cranes and some other water birds often sleep standing in water. Cranes can even stand on one leg all night and it doesn't bother falling down
Hens do this either to rest a sore leg (which can happen due to normal chicken activities-no need to worry!) or to warm up a cold foot. If the behavior persists, check the favored leg for signs of injury or infection. However, standing on one leg is not the only indicator for injury or infection. Limping, hobbling, or refusing to stand are more reliable.

No one is really sure why flamingos stand on one leg. Scientist aren't even sure why flamingos stand on one leg. But one thing that has been proposed is that flamingos stand on one leg to relieve the pressure off the one side and res that side while the other side functions and controls the body. Then when that side has rested then they will alternate legs and do the same thing until they are fully rested and ready to go on about their business.
