Nurses are autonomous independent decision makers.
The decisions that are required to be made by nurses both at the bedside and in the community are complex so they need a good understanding of human behavior, human response to illness (both physical and emotional), and the various factor that influence these responses.
Nurses are also required to have a good understanding of how to promote health and the various influences on health including personal, social, biological, environmental influences.
Nurse work with individuals, groups, families and populations. They need to be able to understand literature and research in order to conduct an evidence based practice. And they have to understand the meaning of ethics and how to conduct their practice so that their clients are protected and treated with dignity and respect.
So you see there are many complex variables and concepts that nurses need to be able to understand and apply in nursing practice and that is why a university degree is required in many countries.
Nurse practitioners need to get a bachelors degree. Then, they need to at least have a Masters Degree in nursing.
