Turkey's necks will change color when their mood changes. When the male is excited, blood rushes to the head and neck. If it is excited, its head will turn blue. When it is getting ready to fight, its head will turn read.

When a turkey gets upset or during courtship the turkeys throat region also called the Caruncle and the flap of skin that hangs over the turkey's beak called the Snood turn bright red. This is because the blood flow increases some scientists think that it was used to scare away predators but many people doubt that because most animals are color blind

The answer is yes when "Toms" get really excited the blood leaves the head and it turns white, sometimes blue as well. The head turns red when he is ready to fight. The blood immediately rushes back to the entire head. Turkey hunters use this along with the intensity of his gobbling to "take his temperature", basically it translates to determine just how hot he is and can he be coaxed into coming into the hunter's set up (decoys) or gun range.
