Humans are omnivores, but the only flesh we can digest without cooking or curing is fish. People did not start cooking meat to kill germs, since we have only known about germs for the last 100 years or so. Land animals are cooked and, or cured to break down their protein. True carnivores have much stronger stomach acid allowing them to completely digest raw meat.

Without cooking meat, you might get food poisoning, E.Coli, Salmonella, or any other various food diseases, most of which could kill you, and that is a major reason to cook meat - to kill bacteria and diseases so when you it the meat, it won't kill you.
