The standard answer will be the space between the wool fibers traps air and insulates, thus keeping you warm. Also, the wool fibers are non-absorbent, so it won't absorb your sweat and become clammy and cold. However, there is a strange property of wool that makes it just warmer than high quality synthetic base-layer (underwear), even though the synthetics have all of the above properties. I personally think it is the scratchiness of the wool that makes the difference. I don't care how soft or how high the quality of your wool underwear is, it just feel different to the skin. I would say it is not smooth and not as comfortable, but the unique sensory input makes me feel warmer compare to a synthetic shirt with identical thickness. I can't explain it, but it is true. I heard old school climbers would wear those scratchy clothing just for that warmth benefit.

Its just because woolen clothes have fibres and between those fibres air is trapped which reduces heat loss. Air reduces heat loss because it is an insulator or poor conductor of heat.
