It binds to the Hemoglobin in the blood, and prevents it from carrying oxygen throughout the body, and deprives the cells and vital organs in your body of oxygen. Also it is colorless, tasteless, and can not be smelled, so this also makes it very dangerous

CO (carbon monoxide) is toxic because when absorbed into the bloodstream, it attaches to haemoglobin, the molecule which transports oxygen around the body. Since there is less oxygen available, the body cannot function properly; at higher levels, no oxygen is available and death can occur quite rapidly.

Hemoglobins are in red blood cells. They are the particles responsible for transporting oxygen throughout your body. Carbon monoxide gas is poisonous because it attaches itself to the hemoglobin to form cabroxyhemoglobin, which is then unable to carry oxygen. When this happens, it is called anoxemia.

On an interesting, if somewhat unrelated, note, CO is actually produced by the human body. It is thought it may be used as a neuraltransmitter and is blamed for several diseases. Interesting topic!
