Gelatin is composed of the molecule collagen (as in your fingernails). The collagen molecules are long strings that weakly bind to water to form a matrix. Since the bonds are weak (hydrogen bonds) the matrix yields and is non-rigid (in lay terms: jiggly). Mad science and Jell-O always go well together.

A jelly is a form of a "gelatin", a very viscous solution than has high cohesive properties. Long strands of gelatin reach across and around whatever shape it is molded into.

The material is very flexible and easily displaced. However, the cohesion makes it elastic, and it will rebound in other directions until the energy is dissipated by friction in its structure.
