Purity. Distilled water is extremely pure and so : 1) Doesn't contain anything which may interfere with the experiment 2) Is much better at dissolving things than tap water Mostly labs use what is called de-ionised water which is produced using a machine containing filters similar to household water filters but much better and bigger. This isn't quite as pure as distilled water but is normally close enough.
