If your question refers to why is it done mechanically then Incubation is much more precise and reliable when dealing with hundreds and thousands of eggs. Relying on brood hens to produce stock is simply too wasteful, and inefficient. Millions of chicks per year are needed to meet consumer demands.

If your question is what does incubation do? Then incubation is the method certain species uses to maintain favourable temperature and humidity to ensure embryo growth.
