The scotch bonnet gets its name from it resemblance to the traditional Scottish cap: the tam or tam o'shanter. The tam is a flat round cap with a pompom or tassel in the center. These caps or bonnets are commonly red. Some may say the fiery taste of the pepper is like some of the strong whiskys of Scotland. Scottish settlers were common in the Caribbean since the early 1600s. In fact, King Charles I appointed a Scotsman, James Hay, Earl of Carlisle, as Governor of the Caribbees in 1627. Some say that one of the sailors who sailed with Columbus was a Scotsman who stayed behind in Hispaniola.

Prior answer: It looks like a traditional Scottish hat from the Robert Burns poem "Tam O'Shanter"

What is a Scotch bonnet pepper?

Scotch Bonnet pepper is a hot pepper and considered a fruit, just like a tomato. It is a capsicum (the chile family). It's name comes from a reference to Tam O' Shanters hat because the shape of the chile resembles those hats. They are very similar to the Habanero chile in flavor and heat index, although slightly less hot than some Habanero chiles like the Red Savina Habanero. The flavor is a fruity and clean bright flavor. They can be red, orange, yellow or green depending on the ripeness.

How is a chili's 'heat' calculated?

Chili 'heat' (actually piquancy) is described by its Scoville number. The Scoville number is determined by the number of parts of water it takes for piquancy to be undetectable. For example, a green pepper is not 'hot' even when taken straight, so its number is 0. Scotch bonnet peppers, on the other hand, can be diluted to one part chili to 200,000 parts water and still be detectable, so the Scoville number of a scotch bonnet = '200,000'. Law Enforcement Grade Pepper Spray = 5,000,000 Scoville units.
