It's not the meal that's so important. It's the telling of the Passover story, along with its symbolic foods (and then dinner) that is critical. The story of the liberation from Egyptian slavery is the central event in Judaism, and Jews are commanded to retell and relive the story every year, as though they themselves had been freed from slavery.

The meal itself is not called a seder. The word seder means 'order' and refers to the religious service held the first night of Passover (Israel) or the first two nights of Passover (outside of Israel). Approximately half-way through the seder a break is taken to eat dinner.

The Seder meal has its origin in the Torah (Exodus ch. 12), which says to eat the Pesach sacrifice, matzos and bitter herbs. Tradition (Oral Torah; Talmud) also specifies the four cups of wine and the haroseth; and the other foods present at the Seder (egg and roasted shank-bone) are also rooted in ancient custom.

The Passover (Pesach) Seder, is of great importance in Judaism. It is a 3325-year old continuous tradition that began on the night of the Exodus from Egypt (see Exodus chapter 12), and is fully detailed in our ancient Oral Traditions (Talmud, perek Arvei Pesachim).
The Seder meal is one of those occasions, like Yom Kippur and Hanukkah, that Jews all over the world, Orthodox and non-Orthodox alike, observe in common. During the Seder, we keep the essential mitzva and customs of handing Jewish traditions down to the next generation, with the traditional Seder foods and the ceremony of reading the Passover Haggadah which retells the events of the Exodus.

The meal in the middle of a Seder is called the Shulchan Orach, which really just means set table. In the table of contents of the Hagaddah, it is section 10 out of 14. (There's a nice melody for the table of contents, so many Seders begin by singing it.)
