Yeast anaerobically( without oxygen) ferments the sugar in wort( broken down maltose and water), producing alcohol and carbon dioxide. Hops are added to give it a bitter taste and then there's your beer!
The yeast is used in beer-making to ferment the sugars that are contained in the sweet liquid called wort or beer that isn't fermented yet. If no yeast was introduced to the wort, none of the sugars would ferment into alcohol. In short, it makes the alcohol.

alcohol is a byproduct of yeast. as the yeast consumes or "eats" the sugars in wine it releases carbon dioxide and alcohol. at a certain percentage of alcohol to total solution ratio, the yeast die out because the byproducts suffocate it as a human would eventually suffocate in an enclosed area. yeast are living organisms and need oxygen and "food" to live

as far as i know no yeast is used in the making of vines. wine however, now that's a different story. the yeast is used to produce the alchohol.
