You must use spring water (not just bottled water)and treat it to keep the Ph and ammonia controlled. Ph imbalances can cause a fish to rub against rocks, etc. which could cause the scratches. If you don't have the supplies to test the water, take a sample to the pet store and they can test it for you, and recommend the proper treatment. Never use tap water-the chlorine will kill them.
The cuts could be from flashing off of objects in the tank. Another reason could be that they were fighting in the tank with another fish. You can use tap water for your tanks as long as you use a dechlorinator. Your local fish store will be using tap water as filling all those tanks will be too expensive to use spring water. I recommend seachems prime as it is super concentrated, so it lasts much longer than other products, but there are many other products that also do the same thing. Make sure that the bottle you use to treat your tank gets rid of chlorine and chloramine.
If the fish is not missing its eye but has a hole in its head near its eye. "Hole in the head" is a disease fish get when they are fed a poor diet with insufficient vitamines and minerals. The cure for this disease is to feed the fish a properly balanced diets including some live food such as 'brine shrimp, daphnia, chopped or whole earth worms etc. It the fish is missing an eye then something physical has damaged the fish. Maybe mishandling or an attack by another fish. Carefull and lengthy observation should help you to identify the culprit if the latter is the case because the attacker will do it again.
Bubbles on any fishes eye is normally caused by ammonia levels spiking.They sell medications to treat it but they also kill beneficial bacteria that prevent that ammonia from spiking,cut back on the food and do a 25% water change and add rock salt at 1 tbsp per 5 gallons of water. Only add salt when you take water out and only the amount needed for the water you are putting back. If it doesnt improve in 2 days do another 25% water change.Use spring or well water.
Bettas have been bread to have beautiful colors. In the wild they are quite dull. So the spot may be a coloration of your Betta. If it is a bump and not just a color change, it may be a benign cyst.

One Gallon? Only a Betta. Most anything that's small enough for a 1g is to active for one. A micro-tank can be absolutely lovely though if you plant it really well, get a rams head snail to keep waste down, and pick out a really pretty Betta.
