People have actually always believed in witches because the fact is that they do really exist to this day.
They aren't the evil, fire ball casting, demon summoning, soul sucking, venomous creatures that tales have lead children to believe.
They are most of the time benign people trying to better the world.

While admitting guilt and repenting stopped the torture, it rarely stopped a death sentence. Torture was not limited to fit adults - children, the sick, elderly, and pregnant were all tortured without mercy. One will admit to anything after enough torture.
All I know is usually tortured to death to try to make them confess. In Salem,Giles Corey refused to confess,and he was pressed to death with large rocks. They kept asking him to name his coven(which didn't exist except in the imaginations of the accusers) and his answer was "More weight" so he would die sooner.
