There were countries not conquered by the Nazis where Jews sheltered, such as neutral Portugal, Sweden and Switzerland, and the nominal German allies, the Finns, refused point-blank to have hand over any Jews. You'd have to assume that had the Axis been victorious (and war hadn't erupted between Japan and Germany, as they were strange bedfellows) that pressure would have been applied to these countries.
Hiding their religion would not have been enough to save many Jews, as the Nazis wanted to wipe them out as a "race". The religion was a secondary issue, the Nazis were happy to eliminate anyone who resembled a Jew and could have had Jewish ancestors, regardless of their religious practices, if any.
