crème de cassis

French; extract of blackcurrants; about 15% alcohol by volume, sweetened with sugar. Mixed with about 10 parts of white wine to make kir, or with sparkling wine to make kir royale.

[kah-SEES] A European black currant used mainly to make crème de cassis liqueur and black currant syrup. See also liqueur.
