Diabetic Cake Recipes For Kids

Helping your child deal with the challenges of diabetes is tough, especially on occasions like birthdays when he or she cannot even eat the traditional cake. Thankfully, there are many diabetic cake recipes for kids. A quick internet search can help you find a whole list for you and your child to make and enjoy together. Diabetic cookbooks are also great resources. As you get better at cooking for diabetes, you can make more complex baked goods and cakes. Here is a simple recipe to start with.

Diabetic chocoholic cake

This chocolate cake is so moist and delicious, you would never know it is made for diabetics. Start by preheating the oven to 350 degrees. Mix 2 cups of cake flour, 1/2 cup cocoa, 1 tablespoon baking powder and 3 tablespoons granulated fructose. In another bowl, mix 1 1/4 cups milk, 1/4 cup melted margarine and 2 eggs. Stir these two mixtures together slowly until well-combined. In another bowl, prepare the filling. This consists of 1/2 cup flour, 1/3 cup finely chopped walnuts, 1/3 cup milk, 1 teaspoon granulated fructose, 1 teaspoon baking powder and one teaspoon of vanilla extract. Mix this together well. Then, spoon the half of the cake batter into a tube pan that is greased and floured. Sprinkle the filling over it, then pour in the second half of the mixture. Bake this for 35 minutes or until the tester is clean. Cool the cake for 20 minutes before inverting the pan to remove it. This recipe should make about 24 servings.

To tell if your cake is finished, insert a toothpick into the center. If it comes out covered in batter, it is not done. If it comes out clean, the cake is finished baking.
