Cooking meals that are diabetic-friendly can take some time. However, there are easy diabetic recipes out there for those with a time crunch and specific dietary needs. These two easy meal ideas come together in less than 20 minutes and are great to serve on any day of the week.

No-cook chopped salad pockets

This recipe is among the simplest possible. Purchase a container of spicy hummus in the natural foods section of your grocery store. Spread about two tablespoons on the inside of a whole wheat pita. Then, chop one cup of yellow squash, 2 plum tomatoes, 8 kalamata olives and 2 tablespoons of parsley. Mix these with 2 tablespoons of fat-free Italian dressing, and stuff the pockets with as much as you can fit inside. If you are not ready to eat just yet, these keep well in the fridge for up to five hours. They are low in fat, high in fiber and full of healthy vitamins and minerals.

Mushroom scrambled eggs

Eggs are a great choice for diabetics, because they are low in carbohydrates and chock-full of filling protein. Omelets make excellent meals in general, but these mushroom scrambled eggs really take the cake. Scramble three eggs, a pinch of salt and a tablespoon of milk in a bowl. Pour this into a frying pan that you have coated in nonstick spray. Then, layer on one-half cup of chopped fresh mushrooms, one-quarter cup low fat cheese of your choice and several slices of crumbled turkey bacon. Wait for the eggs to set, turn over the omelet and enjoy for any meal of the day.

For an omelet that is diabetic-friendly and good for your heart, try using one whole egg and three egg whites. This reduces the amount of cholesterol substantially.

Cooking for diabetics is not tough if you have a couple of simple recipes stashed away. Remember to focus on vegetables and protein, and minimize the carbohydrates. Start with these two recipes, then search the internet to find more.
