An aldolase is an enzyme,^[1] such as fructose-bisphosphate aldolase, that cleaves an aldol.

Types include

A maximum measurement of aldolase may be noted as ALD (max) or ALD_max, which should not be confused with the similarly pronounced AoV_max, the maximum speed of blood flow in the aorta of the heart.
