Amaranthus
A genus of plants cultivated for their leaves and sometimes for their seeds also. The leaves are promoted in south east Asia as a good source of carotene. Paste made from the seeds from A. hypochondrachus was widely eaten in central America, and used in religious ceremonies by the Aztecs.
