(abbr.: SAA or AA) any of various plasma proteins synthesized by liver, and induced by cytokine stimulation. The extracellular accumulation in various tissues of amyloid proteins results in secondary amyloidosis in human and other species. These deposits are highly insoluble and resistant to proteolysis. They disrupt tissue structure and compromise function.
