Also known as bixin, butter colour, or rocou; a yellow colouring (E-160 (b)) extracted from the fruit of the tropical shrub Bixa orellana. The main component is the carotenoid bixin, which is fat-soluble. It is used to colour cheese, dairy produce, and baked goods. The seeds are used for flavouring in Caribbean and Latin American foods.
