[ap-pah-LOO-sah] A small, long and narrow dried bean that's white on one end and dark brown with tan streaks on the other. Its name comes from the Appaloosa horse-both horse and bean hail from the Palouse, an area that encompasses southeast Washington and northwest Idaho. See also beans.
