Recipe origin:
Ethiopia
Ingredients
1 cup vegetable oil (used as ¼ cup and ¾ cup)
2 cups red
onion
, chopped
2 cups yellow split peas
1
teaspoon
salt
½ teaspoon ground ginger
⅛ teaspoon turmeric
3 cups water
Procedure
Pour ¼ cup oil into a large pot and place over medium heat.
Add onion and cook,
stirring
often, until the onion is golden brown.
Add ¾ cup oil and add all other ingredients.
Cook over medium heat until the vegetables are tender.
Serve with
injera
made with vegetable oil instead of butter.
