Aterkek Alecha

(Vegetable Stew)

Recipe origin: Ethiopia

Ingredients

  • 1 cup vegetable oil (used as ¼ cup and ¾ cup)
  • 2 cups red onion, chopped
  • 2 cups yellow split peas
  • 1 teaspoon salt
  • ½ teaspoon ground ginger
  • ⅛ teaspoon turmeric
  • 3 cups water

Procedure

  1. Pour ¼ cup oil into a large pot and place over medium heat.
  2. Add onion and cook, stirring often, until the onion is golden brown.
  3. Add ¾ cup oil and add all other ingredients.
  4. Cook over medium heat until the vegetables are tender.
  5. Serve with injera made with vegetable oil instead of butter.
