The root of Beta vulgaris, eaten cooked or pickled. Known simply as beet in North America. The violet-red pigment, betanin, is used as a food colour (E-162). One small beetroot (40 g) is a good source of folate; provides 1.6 g of dietary fibre; supplies 18 kcal (75 kJ).
