(chemistry) An oxidizing or reducing chemical such as sodium hypochlorite, sulfur dioxide, sodium acid sulfite, or hydrogen peroxide.
(food engineering) A chemical, such as an aromatic acyl peroxide or monoperoxyphthalic acid, used to bleach flour, fats, oils, and other edibles.
